The ultimate comfort food.
This has been my fixation for the past three years. I swear I could happily eat this everyday, three times a day. My go-to toppings — a hearty scoop of baked beans and mounds of shredded cheese. But honestly, when it comes to potatoes, the sky is the limit — you can add whatever your heart desires.
Make it a balanced meal with proteins.
I've been mindful of my protein intake these past few months, so I like to make this a little bit more balanced by topping with a heap load of shredded chicken or tuna.
Then, pair it with some cold, crunchy cucumber or whatever good-as-raw veggies I have hanging around in the fridge.
This is basically just a vehicle — you can top it with whatever your buds and belly crave.

Ingredients
x1 medium to large baking potato
Preferred toppings; butter, cheese, sour cream etc.
OPTIONAL INGREDIENTS; to get crispy potato skin
Salt
Black pepper
Olive oil; OR any neutral oil
Tools
Microwave
Microwave-safe plate
Fork
Air fryer; OR oven - optional, to crisp potato skin
Steps
Preheat air fryer to 220c (425f);
200c (390f) if using oven
Wash & pierce potato with a fork
wash & scrub clean your potato(es)
pat dry with paper towel
place on microwave-safe plate
using a fork, pierce potatoes 2-3 times on all sides
Microwave potato
Microwave on high for 5m
If making more than one potato, add 1m extra for each additional potato
Flip and microwave another 3m
To check doneness
BE CAREFUL, IT WILL BE STEAMING HOT!
you should be able to pierce through the centre with a fork with little resistance
if it’s still firm, add microwave time, 1m at a time
Air fry to crisp the skin (optional)
Coat the potato on all sides with olive oil
Season generously with salt and black paper (about 1/2 tsp each)
Air fry at 220c (425f) for 5m
200c (390f) for 10m if using oven
Serve and enjoy!

Suggested toppings:
salt & pepper

shredded cheese

chives or spring onion
beef chilli/bolognese sauce
proteins; shredded or minced chicken/beef, tuna, prawns, bacon bits etc.
What to do with leftovers:
Make breakfast potatoes;
cube them up & pan fry with olive oil
add paprika or curry powder for extra flavour
Storage:
Store in airtight container, separated from toppings; lasts 3-4 days in the fridge
Reheating:
Microwave or air fry to re-crisp the skin
